What is the Source of Spray-Dried Strawberry Powder?

The final quality of spray-dried strawberry powder depends on over 60% on the raw materials. Guanjie Biotech's bulk strawberry powder sources its raw materials from a naturally advantageous geographical location. This allows the strawberries to accumulate sugars, aromatic substances, and anthocyanins. Not all strawberry varieties are suitable for spray drying. Guanjie Biotech selects processing strawberry varieties (such as certain improved strains of Camrosa or Albi) with firm flesh, deep red color, rich aroma, and suitable acidity. These types of strawberries can form a stable pulp system after pulping and are not prone to excessive browning due to the Maillard reaction during spray drying.

 

How Is Spray-Dried Strawberry Powder Produced?

Guanjie Biotech's spray-dried strawberry powder production process includes the following steps as following.

Blending and Homogenization (No Additives)

The strawberry pulp is processed using a homogenizer at a pressure of 20–30 MPa. Homogenization breaks down large fiber particles and fat globules. This makes the pulp more uniform and stable. It also helps create droplets of a consistent size during atomization. As a result, the final spray-dried strawberry powder has a uniform particle size.

No maltodextrin, starch, or fillers are added during this step.

Atomization

The homogenized strawberry pulp is sent by a high-pressure pump to an atomizer at the top of the drying tower. A centrifugal atomizer or pressure atomizer can be used. Under high centrifugal force (15,000–30,000 rpm) or high pressure (10–30 MPa), the liquid turns into tiny droplets. The droplets are usually only a few tens of micrometers in size. Small droplets have a larger surface area. This helps moisture evaporate faster.

Spray Drying

Purified air first passes through a high-efficiency filter. Then it is heated to the required temperature.

For strawberries, Guanjie Biotech uses a medium-temperature process. The inlet temperature is about 140–160°C. The outlet temperature is about 70–80°C.

Hot air enters the drying chamber from the top of the tower. It moves in the same direction as the droplets. When the droplets contact hot air, surface moisture evaporates within 0.1–0.2 seconds. A semi-permeable membrane forms on the droplet surface. Moisture inside the droplet then moves outward until spray-dried strawberry powder particles are formed.

Technical Challenges:
Strawberries contain high amounts of sugars such as fructose, glucose, and sucrose. They also contain organic acids. At high temperatures, sugars can melt and stick to the inner wall of the drying tower. This can cause wall buildup and charring.

Guanjie Biotech reduced wall sticking by optimizing inlet and outlet temperatures, using a jacket cooling system for the drying tower walls, and adjusting droplet size distribution.

Gas–Solid Separation

The dried strawberry powder bulk leaves the drying tower with exhaust air. It then enters a cyclone separator or bag filter. Centrifugal force or filtration separates the powder from the air. The powder is collected in a sealed hopper. Fine particles in the exhaust air are recovered through a secondary dust collection system. This improves yield and reduces waste.

Cooling and Sieving

The collected spray-dried strawberry powder has a temperature of about 50–60°C. It must be cooled to room temperature using a fluidized bed cooling system. Cooling helps prevent sugar crystallization and sticking. The powder is then passed through a vibrating sieve. Guanjie Biotech's quality standard requires 100% of the powder to pass through an 80-mesh sieve. The opening size of an 80-mesh sieve is about 0.177 mm. All particles must be smaller than this size. This helps improve dissolution, suspension, and texture.

Packaging and Storage

In a GMP cleanroom, the cooled and sieved strawberry powder is packaged immediately using modified atmosphere packaging. Nitrogen filling or nitrogen flushing is used. High-barrier aluminum foil bags are used as inner packaging. Cardboard drums or cartons are used as outer packaging. The finished spray-dried strawberry powder product should be stored in a cool and dry warehouse. The recommended storage temperature is 15–20°C. Relative humidity should remain below 50%.
