Processing technology

1. Harvesting at the right time:
The best harvesting period of sweet corn is the milk ripening period, that is, about 20 days after pollination.
• Harvesting standard:
Corn leaf color is thick green, wrapping leaves are lime green, and the filaments are withered into tea brown. The kernels are full and yellow or light yellow in color. The color is uniform, the size is consistent, the arrangement is neat, there is no miscellaneous color kernel, bald tip, missing kernel and insect moth phenomenon, the endosperm is sticky milky.
• Operation requirements:
Harvesting with bracts, cautious operation, holding and putting lightly, avoiding sunshine, heavy pressure, collision, and so on. It is required to send to the factory for processing in time within 2 hours after harvesting.
2. Peeling to filament:
Sweet corn into the factory to be placed in a cool place scattered. And immediately peeled and processed. The time from harvesting to processing should not exceed 6 hours. If the time can not be processed in a timely manner, it must be put into the 0 ℃ about the freshness of the cold storage for short-term storage. To manually peel the sweet corn bracts and then remove the filaments. It is important to keep it as clean and hygienic as possible, and all operations should be light. There should be no deformation, breakage and discolored seeds. Put into a special food basket after peeling.
3. Selection, trimming and grading:
First of all, remove the sweet corn cobs which are too old, too tender, too moth-eaten, extremely untidy kernels and seriously damaged and deformed. There are a small number of insects, colorful grains and broken and deformed grains of sweet corn cobs with a knife to dig out the insects, colorful grains and broken grains. Then according to the corn cob diameter grading, according to different corn varieties can be divided into 2-3 grades. The difference in diameter between grades is set at about 5 millimeters. This can be avoided when threshing cutting inaccurate or excessive cutting.
4. Cleaning, threshing:

5. Rinsing:
After threshing corn kernels should be rinsed immediately, available boiling water or steam. Boiling water blanching is generally used sandwich pot, steam blanching can be carried out in a steamer. Heating temperature of 95 ℃ to 100 ℃, bleaching time of about 5 minutes.
6. Cooling:
Freeze Dried Sweet Corn should be cooled immediately after rinsing, otherwise it will affect product quality. Generally use the method of cooling in sections. First of all, use cool water spraying method, the temperature of corn kernels about 90 ℃ to 25 ℃ to 30 ℃. Then soak in 0 ℃ to 5 ℃ water to cool, so that the temperature of the center of the corn kernel is reduced to below 5 ℃.
7. Picking:
Timely manual picking out cob shavings, filaments, discolored kernels and other impurities. To reduce the pressure of pre-packaging screening, and to ensure product quality.
8. Quick-freezing:
Freeze dried sweet corn bulk using fluidized bed type quick-freezing tunnel. Corn kernels are laid flat on the conveyor mesh belt, and multiple fans under the drive belt blow cold air upward at a speed of 6-8 m/s to keep the corn kernels in suspension. The evaporation temperature of the machine is -34℃ to -40℃. The cold air temperature is -26℃ to -30℃. The thickness of the corn kernels is 30-38 mm. Freezing for 3-5 minutes to bring the center temperature of corn kernels to -18℃ is sufficient. Quick-frozen corn kernels should not stick to each other, no frost on the surface.

9. Screening:
Quick-frozen corn kernels to further remove impurities, defective grains and broken grains. If necessary, can be 0.4 cm sieve screening.
10. Packaging:
Quick-frozen corn kernels should be packaged at -6 ℃. Generally packaged in polyethylene plastic bags. Sealed after packaging, and at the same time in the seal on the print date of production, boxed and immediately sent to the freezer cold storage.
11. Cold storage:
Refrigerated storage temperature requirements below -18 ℃, relative humidity 95-98%. The temperature fluctuation range in the refrigerator should not exceed ±2℃. Quality standards
